The supra is not a dinner; it is a structure — toasts in their proper order, a tamada to hold the table, dishes arriving in waves rather than courses. At Keto's family house outside Telavi, guests experience the form whole. The afternoon begins in the kitchen, where khinkali are folded and mchadi set on the fire, and continues at a single long table under the vines. Keto's father serves as tamada, translating the toasts and their logic; the family's own qvevri wine is poured throughout. Nothing here is staged for visitors — the table simply grows longer when guests come. Groups leave understanding why Georgians call the supra their true parliament.
