Dezerter Market Kitchen
Dezerter Bazaar is Tbilisi's great working market — churchkhela hanging in ropes, mountains of greens, cheese sellers who have held the same corner for decades. The Market Kitchen starts every session there, walking the stalls with a cook who knows the vendors by name, tasting and buying as the morning's menu takes shape. Back in the studio, a bright converted space nearby, guests cook the classics properly: khinkali pleated by hand, badrijani rolled, pkhali pounded with walnuts. The session closes around one table with the wine already open. It is the most direct route from curiosity about Georgian food to actual competence in it.
